Chocolate Chip Cookies

  • 2 cups Shortening
  • 1 cup Sugar
  • 2 cups Brown Sugar
  • 2 tsps Vanilla
  • 4 Eggs
  • 4 1/2 cups Flour
  • 2 tsps Baking Soda
  • 2 tsps Salt
  • 1 cup chopped nuts (optioinal, your choice of nuts)
  • l large pkkg Chocolate Chips

Cream shortening, sugar, brown sugar, vanilla and eggs.   Add flor, baking soda and salt to mixture.  Blend well.  Then add in your nuts and chops.  Bake at 350 degrees for 10-12 minutes.

Variants:  You could use Butterscotch Chips, White Chocolate Chips; Reeses Pieces or other sorts of chips for additional flavorings.  Sometimes I like to add 1 tsp malt powder for additional flavor.  Very Good.

Blizzard Salad

  • 2 cups Buttermilk
  • 2 sm pkgs Instant Vanilla Pudding
  • 1 can crushed Pineapple
  • 1 large container Cool Whip
  • 1 pkg Oreo Cookies (or Fudge Striped Shortbread Cookies)

Crumble or break up the Oreo Cookies; setting aside 1 cup for topping.  Mix all ingredients together in your favorite serving bowl.  Place in refrigerator to chill.  Sprinkle remaining crumbled cookies that were set aside, on top of the salad before serving.  Very good.

Homemade Hamburger Dumpling Soup

  • 1 lb lean hamburger
  • 2 cups (4 med.) onion, chopped
  • 2 med carrots, sliced (or more if you like)
  • 2 cups celery, chopped
  • 2 8-oz cans whole tomatoes (or stewed tomatoes) undrained
  • 6 cups water
  • 2 tsp salt
  • 1/2 tsp pepper
  • Potatoes (optional)

Dumplings:

  • 1 1/2 cup all purpose flour
  • 1/2 cup milk
  • 2 eggs
  • 1/2 tsp salt

Brown up your hamburger and drain.  Add all remaining soup ingredients and cook over medium heat for 35-40 minutes.  Reduce to low, continue cooking until vegetables are tender (20-30 minutes).  After soup is ready, in small mixing bowl combine all dumpling ingredients and beat until smooth (1-2 minutes).  Drop by teasponful into soup.  Continue cooking until dumplings are tender (6-8 minutes).  Season to taste.

Spicy Beef Jerky

  • 2 lbs lean beef (approximately)
  • 1 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Seasoned Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Worcestershire Sauce
  • 1/4 cup Soy Sauce

Slice beef about 1/4 inch thick.  (The beef cuts better when partially frozen, or have the butcher cut it for you.)  Pour mixed ingredients over meat and marinate for 1 day in refrigerator.  Stir meat once.  Stick round toothpicks through end of meat strips and hang from oven racks with foil underneat.  Set oven on low (200 degrees); crack oven door open and back for 11 hours.  Remove toothpicks and cool.   Store in an airtight container.  Very good.
