Lois’s Lefse
- 3 cups Water
- 1 cup Milk
- 1 stick Oleo/Butter (I like Parkay)
- 4 cups instant mashed pototo flakes (Hungry Jack)
- 1 1/2 tsp Salt
- 2 tblsp Sugar
- 1 1/2 cups Flour
In kettle put water, milk and butter and warm until butter is melted. Remove from heat. Stir in potato flakes and then add salt and sugar. Put in place to cool down. When cool, then add flour with dough blender and hands. Make 18-24 balls, depending on size of lefse wanted and use enough flour to roll out.
Bake on lefse grill at 450 degrees until starts to bubble and get freckles. Turn and bake on other side. Remove from grill and place between layers of towels (lint free) until cool. I like to grill, bake and them steam bake them in the towels to get a nice soft lefse.
Package up in packages of six and store in refrigerator or wrap in newspapers or brown grocery bags and store in freezer. For fresh tasting lefse, place in microwave oven for 10-15 seconds and it will taste like fresh, hot-off-the grill after it has been frozen.
