12 extra large eggs
1/2 large onion, chopped
1/3 green pepper, chopped
1 tsp baking powder
1/3 cup sour cream
1 cup grated cheese (choose your favorites)
(your favorite seasonings to desired taste)
Place your chopped onions and peppers on bottom of ungreased baking or cassarole dish (2 qt cassarole or other baking dish).   Sprinkle some of your grated cheese over onions and peppers.
In separate bowl, beat your eggs and baking powder.  Then add sour cream and beat again until all mixed in.  Pour this over the onions, peppers and cheese.  Sprinkle the remaining cheese on top.
Bake in oven at 450 degrees for 30 minutes, reduce oven to 350 degrees and bake an additional 15 minutes.  Cool and enjoy.
Optional items to be added……sausage, bacon, mushrooms, or anything else you might like to try!!
