$300 Waldorf Astoria Red Cake
- 1/2 cup Shortening (Crisco)
- 1 1/2 cups White Sugar
- 2 Eggs
- 1 oz. Red Food Coloring
- 2 1/4 cups Cake Flour
- 1 tsp Vinegar
- 1 tsp Baking Soda
- 1 tsp Vanilla
- 1 tsp Salt
- 2 tblsp Cocoa
- 1 cup Buttermilk
Mix Vinegar and baking soda (set aside). Cream shortening, sugar and eggs. Make a paste of the cocoa and coloring and add to the creamed shortening mixture. Add flour alternately with buttermilk. Add vanilla and salt. Add the set asside vinegar and baking soda mixture. Beat all well. DO NOT OVERBEAT. Bake in two 8-inch pans at 350 degrees for 20 minutes. Cool and cut to make 4 layers.
Frosting: 1 cup milk and 3 tblsp flour (cook to thick paste and cool). Add 1 tsp vanilla. Beat 1 cup sugar and 1 cup shortening (Parkay) until fluffy. Add the surgar/shortening mix to the milk/flour mix, and beat. Frost between layers and enjoy!
